My dd is adamant that she wants a strawberry cake for her birthday next month. Last year I bought a strawberry cake mix and added food coloring to vanilla frosting for a pink strawberry cake...YUCK! It was awful. I'm not going to do that again. All the recipes I've found online involve a boxed cake mix and Jello. I really want something healthy, preferably whole wheat, all natural, and dairy free (I can sub with soy milk if needed). Anyone have a recipe?

I've seen several recipes that add pureed strawberries to make strawberry cakes. If your local library has "What's to Eat? The Milk-free, Egg-free, Nut-free Food Allergy Cookbook" by Linda Marienhoff Coss there is a strawberry cake recipe in it. She does use white flour, so more adjustments might be needed to use whole wheat.

After you bake a regular cake, you can poke holes in the top with the end of a wooden spoon, then smear pureed strawberries over the top (it will fill in the holes) and cover the whole thing with some sort of thick soy-substituted vanilla pudding. Then add halved fresh strawberries to the top.
