I made chocolate cake for my dh last night and decided to make some substitutions to make it a little healthier. It isn't sugar-free, but I was worried about changing it too much, considering all the other changes I made. The cake ended up being a bit more like brownies. Yum! Anyone have suggestions to replace the sugar?<br><br>
1 C whole wheat flour<br>
1/2 c almond meal<br>
3 T cocoa<br>
1/2 t salt<br>
1 1/2 t baking soda<br>
2 T flax meal<br>
1 c evaporated cane sugar<br>
1 c cold water<br>
1 t vanilla<br>
1 T apple cider vinegar<br><br>
Sift dry ingredients directly into 8" square baking pan. Stir to combine well. Add vanilla, oil, and vinegar. Pour in cold water and beat with a fork until smooth.<br>
Bake at 350 degrees for 25-30 minutes.<br><br>
I put dark chocolate chips on top just after taking it out of the oven, let them melt, and spread them around.<br><br>
I originally made the cake for dh as a treat and, wouldn't you know it, broke my last three weeks of healthy eating to enjoy some with him!

Sounds yummy, and IMO, healthy enough. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> I wouldn't worry too much about the cane sugar; after all, it's <i>cake</i>, kwim? You're meant to eat a piece as a treat and enjoy it -- which I hope you did. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">
