<p>we have tons of sweet potatoes. It would be great to utilize them in a meal instead of on the side. I just made a sweet potato gnocchi. Now, I am just trying to find some other ways to incorporate them as our main dish. Any recipes that you could share?</p>

Also, we eat boiled sweet potatoes served with rice and spicy mayo and a fried or scrambled egg. Classic Peruvian dinner <img alt="smile.gif" class="bbcode_smiley" src="http://files.mothering.com/images/smilies/smile.gif">

<p>I also like them as an entree baked and topped with chipotle hummus.</p>

<p>Sweet potato soup is great.  I usually just play it by ear-- cook a chopped onion in some olive oil, then add 4 cups veg stock and 2-3 cups cubed sweet potato along with a couple carrots (chopped) and one apple (chopped).  When the sw potato is soft, blend the whole thing. . .add any spices that speak to you (sometimes I add a little curry or sometimes go with some cinnamon).  You can also add a can of coconut milk to make a creamier soup.</p>
