Does anyone have any idea what the glycemic index of this type of noodle could be? As often happens, I have trouble finding out info. about traditional foods I eat that I love. I read somewhere that sweet potato noodles (dang myun) is gluten free. But I get the feeling that I should be taking them intraveneously cause it kind of gets me hyper after I eat them. Thanks so much to anyone who could have that info.
