i went out to a "japanese-style" buffet put on by our college culinary program students, and one of the things they had was tempura'd *sweet potatoes*... i have never thought to do this, but it was *so good*...<br><br>
they took large, thick slices of sweet potatoes, and *lightly* coated them with batter (**very** lightly ~ there were some areas that weren't even fully covered) and cooked them...<br><br>
i recommend trying this.<br><br>
i have no idea how you would pull it off at home, but if you sucessfully do it, let me know. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin"><br><br>

Oh! I used to loooooove tempura'd sweet potatoes. Easy to do at home, just slice them up, dip into batter, and fry. I don't eat them very often now, since I don't deep fry anymore. I tried it once with a shallow pan fry and that worked okay, it seems to absorb a lot of oil though. Theywork best with the white kinds of sweet potato that are more dry instead of the "jewel yam" type sweet potatoes (traditional orange types). Google for tempura batter recipes, there are plenty out there usually based on egg, flour and ice water. I've used whole wheat flour with success.

the ones i had at the buffet were the orange ones, and they were soooo soft and sweet. thanks for the tip about the whole wheat flour. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile">

YUMMY!!! My second fav is tempura squash--like acorn or kabocha. Mine never turns out as good as the restaurants when I do it at home and I just can't get the sauce just right--hmmm, I guess I will just have to keep trying<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">

I love tempura sweet potatoes, too. I'd forgotten about them. You know what else is good tempura-ed? Green onions (scallions). Just trim off the very top, but leave them long, with a good amount of the green tops. They kind of fan out and are very pretty, not to mention tasty.<br><br><img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/yummy.gif" style="border:0px solid;" title="yummy"> Now I want some tempura!<br><br>
