I am looking for ideas to use produce in season, especially from you "northern" sort of people...ie-those of us who live where there is a winter <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/winky.gif" style="border:0px solid;" title="Wink">.<br><br>
I need to use my grocery dollars wisely, and am looking for salad and veggie side ideas, but more with a "winter vegetable" theme. Lettuce and cucumber and peppers and tomatoes and all that stuff jjust aren't as tasty and fresh in the dead of winter y'know?<br><br>
All I can think of are baked sweet potatoes with apples and cinnamon and maple syrup, some sort of root veggies (carrots, parsnips, potatoes, etc) roasted with olive oil and some sort of savory spices, waldorf salad, or coleslaw. I then resort to good ol peas and corn when I am stumped!!! I also plan to start a cold frame for some winter type greens next year and give that a try.<br><br>
Any ideas from you all for stuff like squash, brussel sprouts, cauliflower, broccoli, sweet potatoes, beets, turnips, and such? If a recipie try to post quantities please!

acorn or for that matter any kind of squash, baked or steamed with maple syrup ontop.<br>
root veggies roasted with vinegar and a little bitta oil and brown sugar in you wish.<br>
hmmm... those veggies that look like huge green onions, (cant remember the name irght now) sliced and roasted.<br>
baked apples.

Some of our go-to ones are:<br><br>
Mashed carrots and turnips (equal quantities of each, with a bit of butter and salt and pepper - the mash doesn't come out the consistency of potatoes, it's a bit waterier, but still yummy. I am too lazy to actually puree it).<br><br>
Roast brussel sprouts with olive oil and salt; toast almonds separately. When the brussel sprouts are about 10 min from being done, drizzle with maple syrup and toss; add the almonds as serving. Really yummy.<br><br>
Cassoulet in general.<br><br>
For cauliflower we just steam it and toss it with olive oil and salt, or a bit of mayo (still warm). I also use steamed and mashed cauliflower as a topping for shepherd's pie instead of mashed potatoes sometimes. Broccoli doesn't last long at our house (usually we eat it raw) but sauteed with a bit of sesame oil, soy sauce, and toasted sesame seeds it's a treat.<br><br>
Squash... I prefer soups with squash just because I'm not a huge fan of the texture myself, or we put them in stews. But I LOVE spaghetti squash - just prick it totally with a fork, microwave 8-10 min depending on the squash, let sit for a bit, cut open and de-seed, and then use a fork to scrape out the strands. Then you can use that like spaghetti with a marinara sauce, or (our fave) with butter and parmesan.<br><br>
Beets I make roasted beets, polish creamed beets, beet salad, or I boil them, slice, and top with goat cheese for a wicked appetizer/salad plate.

If you're talking about apples/fruit, don't forget berries!<br><br>
We tend to eat a lot of carrots, cabbage, onion, turnip, beets (if I think of it), potatoes, squash (another vote for roasted with syrup!!!), and frozen peas, corn & broccoli.<br><br>
I need to branch out more.

yes! leeks. roasted leeks just rock. rinse them well, and slice add oo and salt and pepper, or whatever seasonings you would like and roast them.<br><br>

This requires some planning ahead at our house. We can/freeze/dry peppers, tomatoes, berries, asparagus, kale, eggplant, etc. We cellar white potatoes, carrots, onions and apples. We grow spinach in a cold frame and sprout alfalfa and mung seeds for greens and crunch on salads and sandwiches.<br><br>
So when I shop for produce in the winter, I generally buy sweet potatoes, parsnips, turnips, rutabega, yams, winter squash, citrus, cabbage, and (always, even in the middle of summer) celery and mushrooms. We can beets, but those are good thru the winter, too.<br><br>
I admit to buckling on occasion and buying overpriced lettuce, tomatoes, and cucumbers, but I am consistently disappointed in them during the winter months.<br><br>
Oh, and leeks are delicious! I've heard about but been unable to find celeriac. Maybe I'll look at the co-op...

I plan to try the sweet potato soup, the black beans with local booty, and the butternut squash.<br><br>
Also in the fall section she has a beet-arugula and bleu cheese salad I will try with baby spinich instead of arugula.

I buy a lot of baby spinach, no matter what the season. <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/bag.gif" style="border:0px solid;" title="Bag"><br><br>
But, how I make the salads is seasonal. Fennel right now is gorgeous, and citrus. I have apples from this fall, so waldorf salad with pecans is good!<br><br>
I love spicy sweet potatoes. I used to dice them small like hashbrowns, saute them with homemade taco seasoning and chili flakes and serve them in tortillas with black beans sauteed with peppers onions and garlic, salsa, shredded cheese and sourcream. mmmmmmmmmmmmmm...<br><br>
Curried butternut squash soup is a big hit right now. As well as spaghetti squash lasagne.<br><br>
I've been experimenting with celeriac lately too. Really yummy mashed with turnip or other root veg! I love this recipe:<br><br>
Whatever root veggies you love, chopped into large chunks of roughly equal size, enough to fill a cookie sheet, that's been greased.<br>
5 heads of garlic, with the top chopped off so all of the cloves are exposed.<br>
1/3 cup olive oil<br>
1/2 cup white wine<br><br>
arrange the veggies on the pan, and nestle the garlic heads throughout, with the cut part facing up. Drizzle the olive oil over everything, then drizzle the wine over everything. Pepper and salt over everything, cover with foil.<br><br>
Roast at 375 for 45 min, then remove foil and continue for 20 min or until golden and delicious looking.<br><br>
I like to take the garlic heads (with a cloth over my hand) and squeeze the roasted cloves all out. If I'm not pressed for time I will slice them in half so there is more garlicky goodness throughout, but just tossing them back into the veg is fine too. Then I pour the entire contents into a serving bowl.

As long as I'm confessing to things, I thought I'd also mention that I've *never* had sweet potatoes before. <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/bag.gif" style="border:0px solid;" title="Bag"><br><br>
Ok, next time I go to the store, I'm hanging out in the produce section and spending $20 on things I normally wouldn't buy or think are "too expensive". I should buy some fresh garlic too. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/redface.gif" style="border:0px solid;" title="Embarrassment">

When dh and I first moved in together, every shopping trip we bought a mystery vegetable, one we'd never had. Then we would look up recipes online and when we found one that sounded yummy, we tried it! <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/joy.gif" style="border:0px solid;" title="joy">

I'm glad you posted this thread here...I tried to post a similar one in the veg*n forum, but only got 2 responses.<br><br>
I'm def. a salad all the time kinda gal, and being that I'm trying to be a cheapa$$, well, this winter I'm looking for alternatives...<br><br><img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile">
