It appears my 2 week old is reacting to some things I'm eating so I'm preparing myself for the possibility of eliminating dairy. I did this with my older DD, so I have done some of this before, but I never did make yogurt or pudding type things, which I've really gotten into eating since then.

Can anyone give me tips on how to do this successfully? I'd appreciate any input.

Puddings and custards are straight substitutions for milk. Cup for cup, or you can water down the coco milk a bit if you want it a bit less rich. But in those recipes, something else is providing the structure (eggs, starch, etc.) and the milk is just volume. I can't help you with the yogurt, though.

I was on an elimination diet recently for eosinophilic disease and discovered a FANTASTIC (non TF) frozen custard made from coconut milk. It was incredible. I think I posted about it on my blog...here it is. I took a batch of it to a family party where several people brought ice cream. The teenagers hung around my batch and I didn't have much to take home, LOL.

Water kefir is an alternative. Milk kefir, unless IgE allergy, helps allergies.

I have always lusted after that when I saw it in the grocery store, but then I saw it has Agave syrup, which is not so good. I wish they would sweeten it with something else. In the meantime, it goes on the long list of things I want to make at home someday...

OP, have you talked to Cultures For Health about coco milk yogurt? She often posts here, but you might want to email her directly.
