So although I have yet to experiement with prized duck fat, I understand its dreamy to cook with. I was wondering, as turkey is a gamey bird, would the same be true with its fat? I just finished up my stock and have it in the fridge to get the fat to come to the top and was wondering if it would be worth saving...When I've tried to cook with the chicken and beef fat I get like this, it kinda makes me sick and really isn't palatable to me...hoping that turkey fat would be diff...

A- dumping it down the drain is really hard on your pipes
B- why on earth would you waste perfectly good fat???

Why skim the fat off your stock? Anything made with the stock with the fat in it will be that much more satisfying to your body. Fat is an essential part of keeping your body healthy.

I didn't notice any gaminess to my turkey fat at all... I used it to make gravy the other day. But if your turkey was particularly gamey, it might be different. I've never had a gamey turkey.

I love cooking with it! I've found it to be much tastier than chicken fat.

I didn't skim the fat off my broth- I like consuming the fat and broth together. But I do have a lot of fat at the top of the "drippings" container, and I may save some of the fat separately to cook with rather than just mixing it in the next time I make gravy.
