After soaking the TVP, I toss it in a frying pan with some extra-virgin olive oil, onion, garlic, and spices to taste - cumin, paprika, turmeric, chili powder, sea salt, fresh ground pepper. I just play around with it until it tastes the way I like it to.

I do mine up very simply. I put a cup of TVP in a casserole dish (or pot), and pour the water on top. Cover with lid and allow to rehydrate. Add a can of tomato sauce and a few tablespoons of taco seasoning (I use a quality non-sodium one from Penzey's). Heat through.

Sometimes I mix refried beans into this, but I usually keep them on the side to layer with the other toppings.

Quick and easy!
