I need to make a batch of black bean soup tomorrow morning. I have two cups of beans soaking, and no recipe! I've tried to do an MDC search, but for some reason the search feature isn't working for me: it is bringing up threads that have nothing to do with beans or soup. I also tried searching the slow cooker recipe thread, but again the search feature was not working.


In any case, I am looking for a good crock pot black bean soup recipe that calls for fresh, soaked beans. I've found recipes on Google, but they all have either canned beans or non-soaked beans.

Any help would be much appreciated! TIA.

I usually only make plain beans in the crock pot (so no recipe) but I don't think it would matter if the beans were soaked first or not for the crock pot. Just when you add the water, only add enough to cover the beans instead of more. If you're cooking it overnight add just a bit extra so they don't dry out.

Vegetarian Black Bean Soup
1 pound dry black beans
1 1/2 quarts water
1 carrot, chopped
1 stalk celery, chopped
1 large red onion, chopped
6 cloves garlic, crushed
2 green bell peppers, chopped
2 jalapeno pepper, seeded and minced
1/4 cup dry lentils
1 (28 ounce) can peeled and diced tomatoes
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
3 tablespoons red wine vinegar
1 tablespoon salt
1/2 cup uncooked white rice
1. Soak beans in water overnight. Put beans in slowcooker with 1-1/2 quarts water, cover, cook on high for about 3 hours. Make sure beans are tender before going on to next step.
2. Add rest of ingredients except for rice, stir and cook for 2-3 hours. Seasonings can be adjusted to suit individual tastes.
3. Add rice and cook another 20 minutes or so until everything is tender. Process about half the soup in a food processor or blender and then add back with the soup.
