Does anyone have any good recipes using buckwheat flour?
I have 2 bags of it in my fridge, and so far my pancakes were a flop (didn't stay together at all!) and the bread I made was flat and dense.
I'm trying to be wheat free, but i guess buckwheat flour would work better with some wheat flour added....not sure what to do with it now!
Homemade buckwheat tortillas! 1 cup buckwheat flour, 1/4 tsp salt, 1/2 cup water, and an optional teaspoon of oil. Mix well and (one at a time) form into a golf-ball sized ball. Depending on the how wet the dough is, I might knead the ball in some flour. Then pat out into a thin circle on a well-floured surface. Transfer to a dry, heated, cast iron skillet, and cook until starting to brown, then flip and cook second side a minute or two. Wrap in warm towel. As you add each cooked tortilla to the towel, they soften. Really tasty if you don't mind the buckwheat flavor!
