I hope this is the right forum. I've been trying to meal plan and part of my problem is trying to recreate leftovers as another meal for my family.

How can I recreate roast (beef), potatoes and carrots. We've eaten it twice and it's getting old.
Any new ideas?

Would it be good as soup?? If so, how would you do it?

You can shred the beef for tacos or sandwiches.
You can mash the potatoes and use as a crust for a cottage pie with the beef and carrots inside.
You can, yes, make a soup or stew with all the leftovers.

Also, if you think you'll get tired of leftovers, try freezing a portion to have a few weeks from now. I do this and it's a nice way to not have to make dinner some evenings! LOL

-shepards pie out of the roast/gravy w the carrots, add onions, peas whatever veg you want inside and mash the potatoes for on top
-slice the roast for tacos/fajitas(with sauteed onions,peppers, sour cream and salsa!)
-potatoes and carrots could be made into a indian curry, with a can of chickpeas and curry sauce
-roast beef into wraps/sandwiches for lunches
-potatoes can be turned into potato pancakes
-carrots into carrot soup
-roast in stirfry...just like you'd use steak or chicken

the soup thing would be SUPER easy...if you have leftover gravy you can water it down with beef broth, dice the potatoes,carrots, beef, add onions, garlic, your choices of spices and simmer

Im a vegetarian now,but I remember when I was young and lived w my grandma/grandpa she'd buy the biggest roast when it was on sale and make it with TONS of potatoes and carrots and would warp it into a million meals!...The shepards pie was always my fav since it tasted more like "home" then a ground beef shepards pie

If people are tired of it at this point I'd just cut up the meat and freeze it. I'd probably get rid of the potatoes and carrots and make a note to cook less in the future because my family wouldn't eat those reheated.

You can use the roast, potatoes and carrot in soup/stew together or with new ingredients (potato soup, chicken soup with carrot, vegetable beef soup, beef barely soup).
You can make sandwiches- bbq beef for example.

i struggle with this as well. soup works but after awhile i started looking at other things.

stew= make it bite size pieces. throw it into a pot with seasonings and the juice from cooking it. add water or more broth till it is as brothy as you like. heat till hot. good with fresh bread or hard rolls. (i like celery in my stew or soup, and diced onions and garlic,etc.)

casserole= cut it all up into bite size pieces. bottom layer mashed taters. then a little sauce (melt 4 tbsp butter in pan. add some flour till a paste. add salt and pepper and other seasonings. add milk or broth until sauce consistency.) then meat and carrots. then cheese. and more sauce. top with tater tots (mykids fav) or french fried onions (DHs fav) or what ever looks good. sometimes i make a dumpling/biscuit mix and bake it on top (pot pie).
(again i like to add gralic, celery and onion.)

fry the potatoes (either in chunks like hashbrowns or mashed like pancakes) with oil or butter, add salt and pepper. you can mash the carrots with it to fry too. then i would make bbq beef out of the roast and serve it on fresh buns.

or you can mash everything up together with cheese and fry patties.

Shepards pie is a favorite at our house, always made with leftovers!!

Otherwise we freeze them to use at a later time. We make Roast Beef Commercials. Layered as follows..........bread, mashed potato's, beef, then a generous amount of gravy over all of it. Yummy!

I've never made Shepherd's Pie before. Is it just shredded beef, mashed potatoes and carrots?

And for the bbq beef, would you just shred and heat with bbq sauce?

my DH just takes the meat and carrots (and garlic, onions, and celery) in the bottom of he casserole dish with gravy or juice then layers the mashed potatoes on top.

bbq beef. yes. shred and heat with bbq sauce. dh put his in a crockpot to simmer for awhile. yummmm

Thanks for all of the suggestions. I ended up making a version of Shepherd's Pie. I put the shredded beef in the bottom of a casserole dish and poured the gravy on top (not much was left, though). Then I added the carrots on top of that. {I had separated the carrots from the potatoes.} I made a packaged gravy that I poured over the beef and carrots. Next I mashed the potatoes and added some butter and half and half. I put the mashed potatoes on top. Baked for about 30 minutes and added French fried onions to the top for the last few minutes.

I thought it turned out really well.
