vegan birthday party?

Hi there everyone,

I am planning my dd's bday party. I am pretty much a vegan and therefore, would like to serve a cake to dd that is has no refined sugar, no white flour, and no eggs or milk. Is that possible?
Will my MIL like it too?
I have heard about Beet Frosting. Has anyone made this?

I am thinking about trying the cake recipe from a book I have called, "How it All Vegan." They have lots of great snack recipes in there for parties too.
I'll probably modify the recipe somehow, but I'll be experimenting for awhile first! If I come up with a good cake, I'll be sure to post the recipe later, in case anyone is interested! This will be an adventure in baking, for sure.

If anyone else has any ideas or would like to share what you do for bdays, I'd love to hear about it!

It sounds like you're working really hard on this birthday cake. I'm sure it will be terrific. What are your MIL's cake preferences? I am guessing that they differ from yours.

The cake recipe that I enjoy most is Carrot Cake from the Complete Vegetarian Cuisine by Rose Elliot. It calls for 2 eggs, but the flax substitution could be made easily. I know you said no refined sugar, but does that include cane sugar (pardon my ignorance)? This recipe uses wheat flour, coconut, pineapple, carrots and I throw in raisins too. I made it three years in a row for ds's birthday then he told me that carrot cake is MOMMY'S favorite and HIS is chocolate
The party guests were more enthusiastic about the cake than he was. I could share the recipe with you if you'd like.

I've had great success with the How It All Vegan Recipes, though I haven't made a cake that I can recall. their zucchini muffin recipe is my favorite!

You could pop around www.vegweb.com for vegan recipes. People rate them and give comments so perhaps you can find a good one based on user reviews.

I make vegan cakes all the time, but I use sugar and unbleached white flour. If you're willing to go in that direction I can give you a fantastic chocolate cake recipe and vegan buttercream.
We make this recipe for banana muffins all the time. So much so that all have to do now is get out the ingredients and my almost three year old does the rest on his own.

People love these so much that I have had two moms ask for the recipe for their kids b-day parties. One made it a cake and decorated it with strawberry cream cheese frosting and fresh flowers, the other just did the muffins, some with and some without frosting.

2 mashed bananas
1/2 cup oil (peanut oil makes them taste peanutty, I usually use canola)
3/4 c. maple syrup or honey
3 Tablespons applesauce
1 Tablespoon water
1 tsp baking soda
2 tsp baking powder
dash of cinnamon
2 cups whole wheat flour (I bet spelt would work too)

Pour into sprayed muffin tin and bake 20-25 minutes at 350 degrees

I have an awesome vegan chocolate cake recipe. It's from one of my Moosewood cookbooks (I think Moosewood Cooks at Home) and it's called the Six Minute Chocolate Cake. It calls for white flour and white sugar, but I always substitute whole wheat pastry flour and sucanat. I have brought it to many events and it's always a big hit. Let me know if you want me to pm you the recipe.
I was practicing veganism at the time of ds's 1st birthday so I made him a vegan b-day cake. I do not remember the recipe I used, but I know it was a carrot cake. I used barley flour instead of wheat (bakes wonderfully!!), sweetened w/ maple "sugar" (dried maple syrup), used flax meal in place of the eggs, and for the frosting I used vegan cream cheese sweetened w/ maple sugar.

We also made vegan pizzas... one w/ a spelt crust , topped w/ red pizza sauce, & vegan cheese, the other w/ a cornmeal crust, zest red sauce, vegan cheese, minced portebellas, black beans, and cilantro.

bebeluna, that sounds great too. And thank you for suggesting the barely flour - I'll be trying it soon, and maple sugar sub and the vegan cc w/maple sugar frosting idea.

I am so excited to try out all of these new recipes now.
Dd's bday isn't till Dec., so I'll be eating lots of cake it seems before then.

Hi again everyone!


Just wanted to check in to give a big thanks to Zealsmom for the yummy banana muffin recipe . . . I tried it and it was excellent and very easy and fast to make. I'm using barely flour instead of wheat, and I think dd will like it just fine! Even dh, who is a fattening foods and meat lover, liked them so much that he wants me to make them for his breakfasts every day!

But I am also going to make some chocolate cupcakes for the older kids and family members (still vegan, of course!)

Thank you too, Marsh for the carrot cake recipe too! I just received your message today and plan on trying that out soon too.

Well, hope everyone is having a happy baking time too now that it is already the time for all the cookies and candy to be made!

Sorry for all the exclamation points, I try not to use them so much, but I am pretty excited about these recipes.
