I need some good nourishing vegan meal ideas for a friend who just had a baby. The family is vegan, I am not, however I really want to bless them with some big filling, nourishing meals. But I have no idea what to make. Any ideas? TIA

How about a big pot of minestrone or other vegetable soup? Soups freeze so well, too, in case they are overwhelmed with meals. You could make some bread or rolls to go with it (which would also freeze well).<br><br>

minestroni is a good idea, and I will take a look at that link a little more tomorrow. I was thinking of doing a tempeh taco type of thing too. I love to cook, my Dh is a vegetarian so I have that to go by, but I don't really know how to <span style="text-decoration:underline;">not</span> incorporate eggs and cheese, at leaste it is a challenge for me.

You can substitute some nutritional yeast (about 2 TBS) for the vegemite/marmite if it is hard to find where you live.
