We usually have a brunch so I do breakfasty foods. This year DH changed it to later in the afternoon. What do vegetarians make for Easter?? All the stores are advertising lamb and ham. yucko! Thanks for any ideas.

Asparagus is a must, in my opinion. Maybe asparagus stuffed crepes? With this Hollandaise sauce? (Vegans: sub EB for the butter-make it 2 tsps to account for omitting the , unsweetened soymilk for the milk, and add a pinch of black salt to give an eggy flavor.

Or maybe an Asparagus quiche or frittata, egg or tofu based? Served with a tossed baby greens salad with avocados, sliced strawberries, raw cashews or chevre, and a balsamic cracked pepper vinagrette and a crusty bread. Strawberries, shortcakes and either cashew cream or whipped cream. OK. Now I know what I'm making for Sunday dinner!

Hummus d'tahinni, falafel, tabolli, bahbahganosh and baklavah just seems Eastery to me, I don't know why. If your a L/O veggie, then there are very colorful hard boiled eggs just begging to be devilled. We also always get a cake shaped like a lamb from the bakery.

Of course there is always choclate bunny ears too

Thank you so much. Catnip - You totally inspired me. When you mentioned asparagus and frittata I remembered I have a great recipe for tomato asparagus frittata. We also happen to have these ingredients on hand which is always great. I am also making a crostata with raspberry preserves. These recipes were done together on a show I watched a long time ago on food network, the italian girl, I think her name is Giada. I also have brie so will make warmed cranberry brie with pecans. This is definitely much more dairy than I like to include in one day but hey it's Easter. If anyone would like recipes just let me know. Some of the other foods mentioned Dh and I would love but not so much the kids and MIL.

We have ds2 sharing his birthday with Eostar this year so we left dinner up to the soon to be 5 yo!!!!

He wants vegan lasagna and we will be having this with some Yves brand curried vindiloo veggie breasts that dh scored for CHEAP!!!!!!!!!

Also- salad, asparagus, birthday cake and CANDY!!
