<p>I got this book, by Cathe Olson, for Christmas from my mom. I just wanted to post on here that it's an awesome book, in case anyone is looking. Some of her recipes are things that I make anyway, but I've gotten some great ideas and have been cooking out of this book nonstop since the day after Christmas! I've been having a really hard time with my diet throughout this whole pregnancy and this book has made a difference. Every recipe is *full* of nutrients, she offers vegan alternatives for almost every recipe, and she has some good information in the front about vegan/vegetarian diets, particularly during pregnancy and breastfeeding. Also, my kids have devoured everything I've made, including the lentil soup with 1/2lb of kale in it. Definitely recommend this one!</p>

<p>This is my current fav cookbook! I just made the Sheppards pie & sweet potato biscuits a few days ago.</p>

This cookbook has been used to death at our house. It has fallen into pieces! We love it so much. xo

<p>I grabbed this book on a panicked fly through of the library a few years ago, and then I had to buy my own copy. We love it too!</p>
<p>Some of our favorites are the spanikopita, the orange-cranberry muffins and the pot pie. Mmmm, yummy! :)</p>

<p>I wholeheartedly agree! The cookbooks is great for both prenatal and postnatal mama care.  I'm eliminating dairy out of my diet because of a sensitivity in my son and this cookbook is still really, really useful.  I like, too, that it has recipes with freezer instructions. :)</p>

<p>When you make the spanokopita, double the recipe because it is soooo good. My daughters and I ate one for dinner and in the morning took the other one out of the freezer to eat for breakfast the next morning! Also, the energy balls are their favorite snack and only take 10 minutes to make. I bring some everywhere with us now.</p>

If you guys haven't tried the coconut millet pudding yet, i highly recommend it. Its THE BEST way i've found to eat millet, sooooo good, and my kids love it!
