DH just picked up our deer from the processor. We have 40 pounds of venison that we got for $55
: Unfortunately, neither DH nor I have ever made venison.

So, how should I cook it?

For us it depends on when the deer was killed. If it was before the rut, we cook it like we would beef. If it was during the rut, we mix it half with beef because it tastes too wild for us. But really, any recipe that calls for beef, just use the venisin.

We use it to make weinershnitzel, instead of veal, with melted velveeta cheese sauce (I know, I know) and lemon.

And sour steak. You have to search for a recipe, but you cut slits in a roast, stuff it with garlic, and broil it in vinegar. Yummy!

Pretty much same as you would use beef. Can't wait to get my 2 deer from my dad when we go back home for Christmas!
Roasts, grind it up and use for meatloaf, (I don't like it for spaghetti for some reason, it tastes too sweet.) Stew. Steaks. Venison stroganoff. Burritos, fajitas. Shepherd's pie.
Did you get the tenderloin? Marinade and grill it. (Save it for a special meal, it's soooo good.)

We did get the tenderloin, what should we marinade it in?

We just grill the tenderloin like you would any good steaks, with a little garlic, salt & pepper... there delicious!! The rump/round we like to use for stir fry's, curries and shish-ka-bobs. As others have said, basicly use it the same way you would beef.
