I was in a rush at the grocery store and bought 4 gallons of buttermilk instead of skim milk. They have the same green labels uughh. Now I don't know what to do with them. I don't want to dump them down the drain and waste all the money. Any suggestions???
if you're not able to exchange them, I'd make a bunch of buttermilk pancakes and biscuits to freeze. You can also make excellent salad dressing with buttermilk, but that you'd have to use up in a few days, it can't be frozen, LOL! How about using it for some fried chicken or battered and fried veggies? My favorite fried chicken recipe uses a buttermilk batter, soooo delish!
I would exchange them, I've done it before no problem.

I would love your recipe for the biscuits also. Looks like I'll be baking all night. The thought of packing all 6 kids up and back to the store on such a cold, damp days is just not appealing to me right now,
I make buttermilk pancakes and freeze buttermilk in 2 cup portions for my fave recipe, using my measuring cup and popping the frozen portions out and freezing them in a ziplock.
Plus it will keep foreeeeeever. The buttermilk I used to for my birthday cake last Saturday was "dated" for January 20th. It was on it's last leg, but heck it's April! lol
I have found you can substitute buttermilk in most recipes, and it's especially good in certain ones - like making for Ranch dressing with the powder.
If you return a refrigerated item to the store they will have to throw it away so it's wasted. You will get your money back or the milk you wanted though.
You could always freeze it in ice cube trays, pop them out and store in a container in the freezer. Ice cubes are rougly about 1 tbsp (some cubes are deeper/wider so it might vary) I often freeze things like that if I buy them for certain recipes and have left overs instead of letting them go to waste I freeze and use later

OP if you don't want to make the drive back, could you share it with neighbors, friends, family? My Dad likes to drink it. I think it tastes gross that way but he loves it. Maybe someone you know likes it that way too. The money is still wasted for you but at least the actual milk wont go to waste if someone uses it.
I'd probably start now and make something every couple days with it. It will last quite a while in the fridge. But I'd stick the extra 3 gallons into the freezer until the first gallon is gone, and then do the same with the next gallon. There are tons of places where buttermilk can be used in place of milk (or even water) in recipes.
Make lots and lots of pancakes & waffles & such as others have suggested... And buttermilk does indeed keep for quite a while, so you don't have to use it *ALL* up right right right right now... unless of course you need the fridge space
You could also freeze it though, just pour off a bit from the top of each container and freeze the whole thing

And if you leave the buttermilk unopened, it'll stay fine in the fridge for like a month. Or more.
I'm always testing stuff like that - I just finally finished up using whipping cream that I bought on sale back in November, it was just unopened and still smelled and tasted fine. Or ricotta... anyway, if it's sealed so nothing gets out, I don't freak about using it right away.
Oh, or fried chicken!! Soak the chicken in the buttermilk overnight, then coat with your favorite seasoning, and fry. Oh yum.
also, some quickbread recipes use it - I just made banana muffins the other day (from a bread recipe) that I found on allrecipes.com using the ingredient search because I had some soured raw milk to use (you can sub it for buttermilk in some recipes so that's what I was looking for).
There is also a yummy chicken fingers recipe (tenders) at allrecipes that uses a garlic buttermilk marinade - we love it!
Thanks for the suggestions everyone. I froze 1 gallon whole, broke the other 2 into 2 cup serving and we had buttermilk pancakes for lunch and will make bisquits and fried chicken for tomorrow. I tried to pass it on but no one wanted any.

Bit late now, but your second oldest is 14/15. Can't he babysit? I'm assuming the oldest is away from home.
how frustrating! That stinks. I successfully froze regular milk to use for baking, I bet you could do the same. I poured a few cups into a gallon zip lock bag, laid it on a cookie sheet and stuck it in the freezer. I made a bunch and just stacked them- it's worked just fine.
