What is everyone making for dinner tonight? Debating between a ginger stir-fry, grilled tofu veggie salad, and bean burrittos. But, these are pretty regular around here. Maybe you mamas can inspire me.

I've been trying to find more yummy vegan regular meals, too. Here's what we've been eating:

-lentils with crushed tomatoes, cilantro, and garlic served over quinoa
-chickpeas, onioins, canned pumpkin, coconut milk, cilantro, and green peppers (optional fennel bulb, sweet potato cubes, and tomato chunks) over brown rice
-black bean and sweet potato chili (alex jamieson's recipe) with brown rice
-burritos with black beans and mango-peach salsa, avocado, grilled onions and green peppers, cilantro, and lettuce
-sweet and sour stir-fry with veggies and tofu/meat substitute
-our old easy meal (we haven't had this in a while), udon noodles with peanut sauce and peas
-spaghetti with tomato sauce
-hoummus on pita with veggies
-squash with anything to sweeten it up (another one we haven't had in a while)

I'm trying to find something to do with my amaranth tonight (some sort of amaranth mushroom patties maybe?), or else we'll have burritos.

our vegan friend/neighbor/honorary auntie is making us dinner. we're having bruschetta (tomato/basil and italian white bean pate) and vegan caesar salad. yum!

tomorrow is pizza on the grill... i can't wait! sauce and cheese for the girls, and fresh tomato, basil, garlic, and cheese for DH and i. we'll probably grill up a squash to go with it too. we just picked up our first CSA share for the season so we have basil and garlic coming our of our ears!

the dinner menu for the rest of the week...
sunday: DH and the girls are fending for themselves, i'll be away

monday: veggie burgers, squash, and rosemary potatoes on the grill
tuesday: black&red bean burritos w/green pepers, cheese, sour cream, salsa, and guacamole
wednesday: spinach&cheese quesadillas w/refired beans, sour cream, salsa, and guacamole
thursday: cold sesame noodles w/broccoli

tonight we had veggie loaf from this website (i used lentils & quinoa): http://www.veganlunchbox.com/loaf_studio.html i made a ketchup sauce for it too. i LOVED it, ds liked it, and dp hated it. oh well!
i also made mashed sweet potatoes with roasted garlic. this is always a hit. the roasted garlic flavor matches the sweet potato perfectly!

i have been trying to make sit down dinners every night ever since dd was born. here are some things we've been eating:
~quinoa salad (parsley, chopped tomatoes, cukes, onion, garlic, lemon olive oil and s&p). i like mine on a pita with vegenaise
~veggie sushi
~szechuan tofu with veggies over rice
~bean soup ( adding a little cinnamon makes it taste SO good!)
~make your own sandwiches (fry up some tempeh, and have lots of good sandwich stuff to go with it. i like mine w/vegenaise and 1/2 gallon of louisiana hot sauce! dp likes his with hummus and greens
~bread salad- cut up sourdough bread with thinly sliced basil & baby greens, and tomatoes and onion, with tons of olive oil, s&p. let it sit so the bread can soak up the tomato juice. you need really good chewy bread for this
~ww pasta with homemade pesto

im sure there is more- thats it for now!

Eggplant Rollatini :)

Cut the eggplant long ways (from top to bottom). I peel mine.
Pan fry some eggplant dredged in bread crumbs and water (or beaten egg, if you eat them) until browned. When cool enough to handle, scoop a tablespoon or two of ricotta cheese (seasoned with fresh herbs, I also throw in some chopped baby spinach or finely diced squash) and roll the eggplant loosely around it.
Put the rolls in an oven safe dish (one layer thick works best, but they can be tightly packed), cover in tomato sauce and a bit of moz cheese and/or nutritional yeast and bake until tops are browned/cheese is melted and ricotta cheese is hot through (20 minutes? on 350F?).

I ususally serve it with some WW pasta on the side. It makes great leftovers the next day too :)

We had hummus wrap. I used huge spinach tortilla and filled it with tomato hummus, tomatoes, bell peppers, onions, sunflower sprouts, and avocado. It was yummy.

My dh LOVES vegenaise, he says it is a million times better than mayo. I only like it in stuff but it makes tofu salad , potato salad , pasta salad ect.... very yummy!!!!!!!

I'm making pasta sauce with yummy fresh tomatoes and basil and sauteing some fresh garden picked zucchini to add to the sauce. We'll also have some corn on the cob and fresh (picked this morning) blackberry cobbler - yum!!! I love summertime fruits and veggies


ETA - just noticed this is yesterday's thread. Last night we grilled veggies and had tabouli and potato salads.

Last night our friend, who's been living in Siberia for a year, came back to the US for a visit. He really wanted some AMERICAN food, so we made Gardenburger Riblets on rolls with sauteed onions and red peppers, spiced up proper, french fries, and southern greens with garlic and onions.

I think we're in the process of transitioning to strict vegetarians (dh doesn't want to give up his milk, so I'm ok with that for him) although I do still have some meat in the freezer to use up over the next month or so. Anyway, tonight we're having veggie curry and yellow Indian jasmine rice.

Tonight we're having an easy dinner - Club sandwiches made with whole wheat bread, hickory smoked tofurky slices, tempeh bacon, heirloom tomatoes, onion, and lettuce, and big mixed salad with lettuce, endive, avocado, and the rest of the tomato/onion.

chickpea salad (vegenaise, smooshed canned chickpeas, dulse flakes, food processor-ized kale & purple cabbage & carrots, diced onions, dried parsley, ACV) on ezekial bread. mmmmmmm
