OK - I'm a single mama and my dd just doesn't eat that much yet. I can cook a lot but never eat it all in time. I have no idea what the rules are on what freezes well and doesn't.<br><br>
Can you chime in with what you make to freeze?<br><br>
This way I can make up a batch and store by the serving for quick healthy meals for us.<br><br>

I keep a stash of vegan burritos frozen in individual packages for quick meals. To make I just combine a can of veg refried beans, a can of black beans, a can of corn, brown rice and salsa. Roll it up in flour tortillas and freeze!

I like to freeze sauces - such as curry, spaghetti or pesto....great for a quick meal! Make some pasta (or steam some veggies for curry), heat up the sauce and you have a meal!

I totally agree . . . make chilis, soups, etc., then make some kind of grain (couscous, quinoa, rice) or bread. Some things I keep on hand to make soups and stews:<br>
canned tomatoes<br>
cooked beans<br>
frozen corn and peas<br>
frozen peppers<br>
vegetable boullion (adds more flavor than just plain water)

i freeze alot of soups and stews YUM.

Bumping to see if anyone else has ideas. I'm loving the ones I got but I'm not a huge soup/stew fiend....<br>
I've been eating a lot of burritos lately!<br>

It would be easier to answer if I knew what sorts of food you preferred, and what sorts of foods your family might not eat.

Thanks mama - sorry that I didn't post this earlier. I'm converting slowly so I'm new to this. I do like beans and most veggies. I'm trying not to do too many processed carbs but they are alright in moderation. As I mentioned before, I'm not a big stew/soup girl (though good gazpacho gets me every time)!<br>
So far, there isn't much that I won't eat...<br>

Family = just dd and me and if I can get her to eat 1/2 a cup of food a day, I'm lucky....

I read your blog and your child is absolutely fabulous. What an alert being she is!<br><br>
Her mama seems to be a very mature, and forward- thinking person. You look about 28, but you sound about 48. (And imo, that's good! lol ). Peace be with you!

Those words were really sweet to read... it has been "one of those" weeks so your kind words made my eyes well up a bit.<br><br>
And yes, she is quite the alert little gal - such a gem! Off to snooze with her now!<br><br>
Thanks for some recipe help. Maybe I should x-post in Single Parenting too....
