<p>It's really not hard to make if you have a winter source for cheap parsley! I put cucumber in mine in addition to tomatoes and onions too. A lot of larger grocery stores now carry bulgar wheat as well.</p>
<p>Here's my Mom's recipe, it makes a ton though so beware:</p>
<p>1c bulgar soaked in 1 cup warm water (about 2 hours, or until the water is gone)</p>
<p>2 bunches green onion</p>
<p>2 bunches parsley</p>
<p>2 cups mint leaves</p>
<p>1 bell pepper</p>
<p>1-2 cloves of garlic</p>
<p>2-3 tsp salt</p>
<p>1/4 c olive oil</p>
<p>1/2 c lemon juice (2 lemons)</p>
<p>2-3 fresh tomatoes</p>
<p>1 cucumber</p>
<p>pepper to taste</p>

<p>Dice or mince all the herbs and veggies and combine with the bulgar. Mix the lemon juice, oil, s&p and toss with the salad. Let chill several hours, and re-salt to taste. Tastes like summer!</p>

<p>I've been craving beef, dairy, and cooked tomatoes. Chickens could go extinct right now and I wouldn't care! Oh, and pickles. I eat a ton of pickles, or anything with vinegar. In the beginning I couldn't eat anything greasy, but now I feel better and can eat some fries or a burger once in a while.</p>
