I'm trying adzuki beans for the first time, but don't know what to do with them. I had thought to just make plain old rice and beans, but after reading some stuff online, it sounds like they are used more for sweet foods. Would they still be okay with rice? Maybe with coconut and ginger, something sweeter like that? I'd love to have some recipes for these!

You can make them "regular" but make sure you cook them a loooong time! Else serious gas. Traditional Japanese use is for sweet pastries.

I always cook beans with kombu, which helps eliminate gas.
