I want to make sunbutter cookies. I have a flourless recipe I want to use, but I can't use eggs. Is there anything I could substitute instead? Here's the recipe:

1/2 c. of nut butter
1 egg
1/4 c. rapadura
Maybe flax seed? For one egg I would grind 1 Tbl flax and mix it with 1 Tbl of water and then add that to the batter.
Apple sauce or pureed banana can be kind of fluffy and hold up the dough, which is what (I think) the egg does. Egg also has fat, which makes the cookies smoother, so maybe add a little coconut oil or something.
We go on different nut butter phases-we are on sunbutter right now.
