I know some of you must have some different ideas of what "beans and rice" mean than I do. So I thought perhaps we could talk about how many different ways you can make "beans and rice" in the light of several frugal grocery shopping threads lately.

How do you prepare beans and rice?

When I was a kid my mom would make it the following way:
cook white rice
open a can of red kidney beans and microwave them
put a big mound of rice on the plate, top with kidney beans + bean juice, and sprinkle it with cheese and black pepper

Ta da! ;P Actually, me and my sister used to love this.

Now if you want REAL beans and rice, I would make one of Daisy Martinez's recipes from http://www.daisycooks.com. They've got all kinds of stuff in them, like annatto seeds and sofrito and olives and stuff.

I usually make cajun-style red beans with andouille and serve them over rice.

Sometimes I make a thick black bean soup with lots of cilantro and serve that over rice.

Or, a tomato-ey rice with lots of bell peppers, corn, and black beans or pintos (or cannelini beans, in a pinch) is good, and fast.....

black beans (canned, or soaked and cooked) then cooked with salsa, served with brown rice and collard greens!

Mmmm.... I love bean soup. Especially with all different kinds of beans! I love beans but dh absolutely won't touch them. He says the texture bothers him.


Can't wait to read more....
