Kefir's biggest benefit over yogurt is that rather than just supplying good bacteria it actually recolonizes your digestive tract with good bacteria and therefore has a bit longer lasting effects than yogurt.

Kefir comes in two forms, dairy kefir and water kefir. Dairy kefir is made with milk (cow or goat generally). Water kefir is made with water, sugar (which gets eaten up by the kefir grains) and can be flavored to make a sort of lightly carbonated soda (I personally love adding lemon juice to make a great lemonade). Dairy kefir is more concentrated but generally speaking, you can drink more water kefir since it's water based. I generally drink at least a quart of water kefir a day because it's yummy!

we are diary free and have been wanting to get probiotics for healing the gut---would water kefir be a good choice? where would I get it? is it hard to make? how does it taste? to a new person is it horrible? or good?

Yes. And depends on why you are taking the probiotics. For instance, babies need different probiotics than adults, in general. And some illnesses or issues benefit from specific probiotics.

Homemade yogurt that is fermented for 24 hours, will have an average concentration of 3 billion cfu/mL of yogurt. If you were to eat a small bowl (500 ml) of 24 hour fermented homemade yogurt, you would receive 1.5 trillion beneficial bacteria - 100 times more bacteria than a 15 billion capsule.

Furthermore, freshly made kefir can have an average microbial count as high as 10 billion cfu/ml. This includes a mixture of various beneficia bacteria and beneficial yeast strains. This means that a 500 ml glass of homemade kefir could contain as many as 5 trillion beneficial microorganisms or even more!
