I just got some young coconuts and I am going to make kefir out of the water but what can I do with the meat I scooped out? I would like to make a yogurt or pudding maybe cheese but don't have a recipe for any of those. I would also like it to be cultured to get the probiotic benefits from it. We are on a candida diet so I don't want to add any sugar to it so would the natural sugar in the coconut feed the bacteria? Can I use a probitoic capsule in place of a starter? So many questions
