I don't have any pockets or AIO's yet, and I need some for outings and for DH. I have a yard each of PUL, microfleece, and sherpa. I'm tempted to make microfleece/sherpa pocket fitteds, because those are the only two stretchy fabrics I have, and all of my dipes are flannel so far. Also because I need some microfleece-lined dipes for nighttime.Or should I make PUL/microfleece pockets with sherpa inserts?

Should I just get more of everything?

I'd do either a PUL/microfleece pocket with sherpa insert OR a PUL/microfleece AIO with sherpa soaker (sewn internally or externally in quick-dry fashion and topped with microfleece). I've made PUL/velour AIOs with the VB AIO pattern and used 3 layers of sherpa inside them. They're awesome!

*especially* buying more But... if you *really* wanted to stretch the items that you have, you can always use them for the parts that show and then use old t-shirts as the soakers (yeah, you do have to have more layers, because jersey is thin... but you're not paying for anything that way!) ... plus, with that you get more bang for your visual buck!
