I think we're going to have french toast. I'm tired today and that's about all I have the energy for, unless of course DH wants to "cook" which will mean take out. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

DH has requested pasta, which fortunately, is possible (we have no food in the house). He has a half marathon in two days, so this is his two day pre-race carb loading.<br><br>
We had scrambled eggs with veggies yesterday and prior to that have been subsisting on foods that I made previously and froze. I have the energy to cook approx once per week these days.

I have very little energy for cooking these days, too, it seems. I am trying to buy as many premade healthy-ish things as I can. We are having Brown rice (Express Two Minute Microwave) , corn cobs (microwaved for 4 mins each), and cook from frozen chicken breasts wrapped in provolone and mushrooms (from cosco - bake for 30 mins). Skimmed milk pudding for dessert.

steak tips (i've had a bad craving for red meat...) that dh will have to stand in the pouring rain to cook <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/duck.gif" style="border:0px solid;" title="Duck">: with potatoes, corn and a salad if I can get motivated.

I think veggie dogs and tossed salad. Nothing fancy, but we have a meeting with our accountant right before dinner so there won't be any time to put anything great together...unless we end up getting a big return and we're feeling rich enough to eat out AGAIN! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol"><br><br>
I'm only starting to feel up to cooking again. We've been eating out so much this month it's disgusting.<br><br>
I made felafel last night. My poor husband was so happy to eat something homemade again. I usually only get a reaction that good when I cook meat for him! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

I'm getting treated tonight! Husband and I are going out to dinner with some of his co-workers, and being the food freak I am, I checked the menu out online--I'm looking forward to Polenta and Veggies in Marinara! I'm so excited to go out, you'd think it was prom. I have been too exhausted and grodily sick for weeks. I miss PEOPLE, and I miss having a reason to wear cute clothes.<br><br>
Last night I finally got the energy to cook something, I made spinach and ricotta whole wheat ravioli with steamed (frozen) veggies and tofu cubes in ALFREDO sauce. not bad! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> other than that it's been takeout and heating up frozen stuff!

Last night, while puking in my van along the way; I went to a friend's house for her Premier Jewelry home party and she had a great food spread. I pigged out and was so surprised to actually hold it down!! I've never had such a craving for celery in my life.<br><br>
As for tonight, I'm at the mercy of whatever DH ends up with from the store. I'm feeling terrible today.

The girls and I had whole wheat noodles with butter and steamed veggies (all mixed together). That's been a staple for me lately. I made it up at lunch for myself, so I didn't have to cook this evening. DH is picking up his brother from the airport and they'll be grabbing something on the way home.<br><br>
Some of you are having some pretty nice dinners! I don't have the energy to put together a nice meal right now. I wish I did. French toast sounds really good. I haven't had the least bit of desire to eat protein (eggs, beans, meat,etc.) but I realized today that whole wheat french toast actually has quite a bit of protein in it. I'll have to make that in the morning. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/orngbiggrin.gif" style="border:0px solid;" title="orange big grin">

I also have had zero energy for cooking in the evening. I guess if I'm going to do it I should get it done in the afternoons on the days I'm not working.<br>

All this french toast talk has triggered something! Tomorrow, I'm going to talk my husband into breakfast at our favorite vegetarian restaurant; they make a mean banana bread-based version, with candied walnuts...

We are having enchiladas tonight. I will be having a chocolate drumstick for dessert as well. Last night I was so good. We had a very yummy salad with cranberries, carrots, nuts and a white balsamic dressing with whole wheat ziti. For dessert we had a fruit salad I made fresh that evening. You can't be good every night!

I've been awful all week. I went to Trader Joe's and raided the frozen section on Monday. We've been eating stuff like gnocchi, tamales,etc-all stuff thats frozen but basically just needs heating. Then I'll make a veggie to go with but that's the extent of my effort. I can't wait to have more energy again.
