Like I know the boxed stuff is crap..but really what's wrong with mac n cheese made...not from a box/mix....

Like

cooked Whole Wheat Macaroni...

sauce:

Make a roux out of flour/butter

add some milk...while stirring..

then...add some grated cheeses...cheddar, ect ect ect..stirring till melted. then pouring over the mac and stirring it up...

Really, other than the diary bit. what's so wrong with that? Why is Mac n Cheese so villified???

nothing's wrong with it. It is delicious. I think it gets a bad rap from the orange stuff (which is also delicious
.

And it's easy to add baby spinach or other veggies and some cut up turkey dogs, and you've got a balanced meal.

Very yummy. But as a whole meal, I'd say it's missing something. If we're going with a standard food plan, there's nothing from the veggie group and the only protein is in the cheese. Just my $0.02, not trying to say it's unhealthy. Now I'm craving it....

Once in a while, it's not going to kill anyone, of course, but it's high in fats and carbohydrates. That's basically the issue.

AAh I see, when people hear/see mac n cheese they think of the blue box with the orange powder...I gotcha.

Heck you know for the LONGEST time I didn't even know you could make it from scratch? seriously! I learnt when I was volunteering as a cook at the local youth shelter (before acctually getting hired on as their janitor
: I woulda rather stayed a cook)

But now I know and OMG yum! Sometimes I put a couple of cups of cubed smoked turkey and toss it in a casserole dish and melt some more grated cheese on top...

I have a recipe for mac n cheese that uses egg yolks and cream instead of a flour roux, which I personally think makes it a bit healthier -- I use raw, organic cream and organic, range fed eggs, so that's a plus, too. I can post it if you want. Let me know.
Oh, and we always serve it with slices of tomato and a salad of some sort, too.

Love me some mac n cheese!

Here you go. I'll post the recipe as I was given it and list my subs in parenthesis.

Cook one pound of macaroni according to package directions/taste. (I always use brown rice pasta, which is another way to make this meal healthier. It is a very good sub for white pasta in terms of cooking time, taste, texture, etc.) While that's cooking, prepare the following.

1 pound shredded cheese (I like raw white cheddar, but you can use any hard cheese or even combinations of different cheeses.)
2 eggs (I usually only use the egg yolks.)
1 cup cream
1/2 tsp mustard powder
dash tabasco sauce (This is optional -- I often make it without)
salt, to taste
pepper, to taste

In a large measuring cup or small bowl, combine eggs, cream, mustard, and tabasco.

When the macaroni is done to your taste, drain and return to the pan. Return pan to burner over low heat. (Very low -- 2 or 3 on an electric stove.) Stir in 1/3 of the egg & cream mixture, then 1/3 of the cheese. Continue alternating the egg & cream mixture and the cheese, stirring well to ensure that the cheese is melting evenly between each round, until all has been added to the macaroni. Salt and pepper to taste. Serve.

This recipe makes for the creamiest, richest, most filling mac n cheese I've ever had. Sorta like those oh-so-bad versions you get in restaurants, only much, much better. Enjoy!

Exactly--everything in moderation that's the key.

How is that the Europeans eat tons of fat, pastries, carbs etc and still aren't obese like us Americans?

Probably cause they don't eat "SUPERSIZE" portions of it. And, my additional theory is they don't have all the preservatives and added chemicals in much of their food either.

That recipe sounds yummy, kdmama!

We make tomato mac... basically the recipe that Pandora posted (equal parts flour and butter, then adding milk, etc.), but I reduce the milk, and then add a can of diced tomatoes. Veggies on the side, of course.
