Well in addition to the other excellent suggestions above (I sure hope one of them work) - I was also thinking you could add ground up nuts and seeds (use coffee grinder or blender) to add to your oatmeal. Also maybe some granulated kelp (calcium, iodine and other minerals).

Maybe you could also drink or use coconut milk too. It has lots of calories and nutrients.

What about mashed avocado?
