We're not vegan but my dd is allergic to milk and eggs so I've altered many of our baked goods to be vegan appropriate. It uses regular sugar, I don't think thats a problem with a vegan lifestyle. Here's the recipe with my alterations:
3/4c.shortening (I use 1/2c. coconut oil, 1/4c. vegan margarine)
1.c sugar
2 eggs (3T. veg. oil, 3T water, 2t. baking powder)
1 t. vanilla
2.5 c. flour (extra for rolling)
1 t. baking powder
1 .t salt
- Mix thoroughly shortening, sugar, eggs and vanilla. Cream together until creamy.
- Blend in flour, baking powder and salt. Add extra flour until dough is a good rolling consitancy.
- Refridgerate for an hour, covered. Heatoven to 400*. Roll the dough (I always roll it just a little thicker than I think it should be). Place on ungreased cookie sheets, bake for 6-8 minutes until the edges are just golden.
- Cool and decorate.
