My toddler is 3yrs old and is mostly vegetarian. I cook all vegetarian meals-most times they are vegan meals. I'd love to know some of your toddlers<br>
favorite veggie meals. I'll list some of ours as well.

Polka dot rice - bright colored veggies and tofu diced to the size of a pea and mixed with brown rice, soy sauce and coconut oil. Let the kid do the mixing.<br><br>
Tofu fish sticks: <a href="http://shmooedfood.blogspot.com/2006/01/tofu-fish-sticks.html" target="_blank">http://shmooedfood.blogspot.com/2006...sh-sticks.html</a> Make the crumb coating, slice the tofu, and let the kid dredge it in the crumbs and put it on the tray. Serve with sweet potato oven fries.<br><br>
Cream of tomato soup: 1/4 cup raw cashews, 1/2 cup water, 1 14oz can diced tomatoes, or 2 cups fresh, 2 TBS nutritional yeast, 1 clove garlic, juice of 1/2 lemon, 2 tsp sugar or agave. Blend in a blender until completely creamy, then heat and serve.<br><br>
Corn dog cupcakes: use <a href="http://theppk.com/recipes/dbrecipes/index.php?RecipeID=39" target="_blank">http://theppk.com/recipes/dbrecipes/...hp?RecipeID=39</a> to make corn muffins, and add sliced vegan hot dogs to the cups.<br><br>
Raw vegan ranch: 2/3 cup raw cashews, 1 cup water, 1 tsp apple cider vinegar, 2 tsp onion powder, 1 tsp garlic powder, 1/2 tsp salt, blend until completely creamy, then add 1 tsp dried parsley and pulse to mix it in.

Broccoli soup- from the Oprah website<br>
Black bean and pumpkin soup<br>
Fried Tofu-we usually serve it w sweet potato and honey baked lentils<br>
Homemade pizza -we use the Artisan Bread recipe for the dough<br>
Black bean burritos w Guacamole and fake sour cream<br>
Annie's Mac and Cheese-this just started recently <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/redface.gif" style="border:0px solid;" title="Embarrassment"><br>
Veggie stirfry w Tofu and Jasmine Rice<br>
Veggie Burgers w sweet potato fries<br>
Eggs- done any way<br><br>
Hopefully more things will come to mind. I try to do green smoothies alot to<br>
get some greens into him. He also loves carrot juice so that helps.<br><br>
Thanks Catnip- Can't wait to try some of those recipes! The fishsticks sound great.

If you want a tofu chicken nugget/strip, just make that same blend, but omit the kelp and the dill, and add a teaspoon each sage, thyme and parsley to the crumb coating instead.

I think my kids might eat the corn dog cupcakes- thanks for the recipe!<br><br>
I have such a hard time feeding them because they really hate beans, and i eat beans at almost every meal

My toddler is so easy, so a lot of these are really simple.<br><br>
Beans heated up (usually black beans or chickpeas) then mixed with a little tamari and oil - he loves this! So easy.<br><br>
Pretty much anything italian. He loves pasta, pasta, pasta! With red sauce, with this "<a href="http://www.yourveganmom.com/your_vegan_mom/2008/10/vegan-cheese-sauce-mix.html" target="_blank">cheesy" sauce</a>, with pesto...also pizza, real mac and cheese...<br><br>
Loves roasted broccoli, brussels sprouts...<br><br>
He loves tofurkey just rolled up - a regular lunch might be several pieces of tofurky rolled up, some corn heated up, and an orange.<br><br>
Oh, he also loves these <a href="http://frugalabundance.com/mybestfriedtofunuggets.htm" target="_blank">tofu nuggets</a> (I usually halve the recipe).<br><br>
He's also a big fan of frozen-thawed then marinated tofu. I had some marinating the other day waiting to be added to a shepherd's pie, and he ate a ton of the cubes just as is! They were marinated in soy sauce, garlic powder and olive oil.<br><br>
Roasting chickpeas is also a good way to get them to eat beans! They're very popcorn like.

Bean, cheese & spinach quesadillas on corn tortillas with guacamole and salsa.<br>
Tofu (or edamame) and veggie stirfry with brown rice.<br>
Typical stuff like grilled cheese, veggie pizza and pasta is always scarfed down too.

Her 2 favourite meals are Tofu and veggie stirfry on noodles or spagetti and tomato sauce. She loves anything with long noodles.<br><br>
Oh and how can I forget the macaroni and "cheese" made with nutrtional yeast. She loves that.<br><br>
I dont eat eggs but I will scramble some up for her with veggies and she loves it.

Those of you that do veggie stirfrys-what are you putting in the stirfry? Lately, my stirfrys are kinda bland and even I am tired of it. I sautee the veggies w some garlic and tamari but like I said its kinda boring.<br><br>
Unfortunately, my ds does not like tomato sauce. I do make him homemade mac and cheese too but I don't want him eating too much pasta. I use the quinoa pasta once in a while which I think is healthier.

I drizzle our stirfry with hoisin sauce. Or I will make a sweet and sour sauce with pineapple chunks.

Its funny. I've been using hoisin sauce too and I'm not sure if I like it or not.<br>
It may be the tofu that I don't like sauteed w it. I think there is a veggie version of fish sauce that I'm going to have to look for. I do the pineapple chunks too.<br>
What veggies are you using ? Lately, I have not had many asian style veggies in my delivery so I'm using up odds and ends.

I also use vegetarian oyster sauce. Its more salty than hoisin sauce and not as sweet.<br><br>
I will do mushrooms, bell peppers, onion, and zucchini in a stirfry. I also buy the big bags of frozen stirfry veggies, because they keep a long time and i live in an isolated mountain community.

Catnip -Ds and I made the fish sticks tonight. They were awesome! I did not follow the recipe exactly but still came out great. I couldn't find my almonds so I used sunflower seeds and I made a smaller batch of the breading. Next time I'm going to make the entire batch of breading and follow the exact amounts and just put some aside if its too much. Loved this recipe. Thanks again.

TNB- tofu (marinated a little in braggs and sesame oil), soba noodles and broccoli (sometimes carrots too)<br><br>
Breakfast for dinner-eggs, smoothies with protein powder, fruit and spinach, baked beans, veg bacon<br><br>
Lentil soup, oatmeal bread or sweet potato fries<br><br>
homemade pizza with fresh veg on the side with hummus<br><br>
We are in such a rut these days...I need inspiration!

Yeah, that recipe makes enough for 2-3 blocks of tofu. I just throw whatever's left in the freezer for the next time.
