Modified Manioc Starch

This is info I received about Chebe's "modified manioc (tapioca) starch" if anyone else is interested and having to scrutinize every ingredient of every food.

All "modified" starches are made in a similar manner - with a chemical process /residue left in food. It is something I was never really aware of until a few days ago.

Our product is a Tapioca Cross-linked starch pregelatinized. The Chemical
modification is done by a food grade and "GRASS" agent. The pregelatinization process is done by temperature.

More specifically, the chemical modification is done by "Sodium
Trimetaphosphate" and "Acetic Anhydride". After the reaction, the starch is
washed and the final level of chemicals added are less than 0,1% and 1,5%
respectively.
