I would love to see recipes if anyone wants to share. I am looking for something that would either be plain or with chocolate chips - no raisins!!!

Thank you!

I don't have a specific recipe, but I have been doing the following when I bake and it has yet to be a problem:

Using 1/2 whole wheat flour and 1/2 white
Using sucanat instead of white sugar (and decreasing the overall amount)
If the recipe calls for say, 1/2 cup of oil, I use 1/4c applesauce and 1/4c oil
Adding grated carrots or zucchini

Here's one you might like:

Banana-Oatmeal Cookies

These moist cookies contain no sweeteners, butter, eggs, or wheat.

2 cups rolled oats
2/3 cup almonds
1 teaspoon baking powder
1/4 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups mashed banana (about 3 bananas)
1/4 cup canola or safflower oil
1 teaspoon pure vanilla extract
3/4 cup raisins, chocolate chips, or carob chips

Preheat oven to 350-degrees. Lightly oil baking sheet. Grind oats and almonds to a coarse powder in food processor or blender. Pour them into a large mixing bowl. Stir in baking powder, salt, cinnamon, and nutmeg.
In separate bowl or in food processor, beat together bananas, oil, and vanilla until smooth and creamy. Add banana mixture and raisins or chips to oat mixture. Mix well.
Drop cookie dough by tablespoons onto prepared baking sheet. Bake for 13 to 16 minutes, or until bot-toms are golden brown.

Yield: 3 dozen

Yikes - that was sure strange. Every once in a while, my copy/pastes do not translate well - sorry about that. Anyway, it's all fixed now. Hope you like . . . .

To make any cookie or muffin recipe a healthier one I replace white flour w/ spelt or barley flour, add some flax meal, replace milk w/ rice or almond milk, replace butter or margarine w/ Earths Best or Spectrum Spread non-dairy butter alternatives, and instead of white sugar I use maple syrup, honey, sucanat, or date sugar. Also, I buy the omega-rich eggs, and like to add extras like nuts, hemp seeds, dried fruit, etc. You end up w/ a much healthier, very tasty food!!
